Sour Cream Enchiladas

During my pregnancy I lost my love of mexican food.  Sadly, it still has not returned.  I make the occasional taco and visit Taco Bell with my taco loving husband but I never long for mexican as I once did.  I think this recipe changed that for me.  Mmmm these were so good.  So good that when I just walked into the kitchen to heat some up for lunch I discovered that my men have taken them all to work.  Bummer.

2 boneless skinless chicken breasts cubed (next time I will cook then shred in the food processor)
1 bag shredded cheddar cheese
1 onion, chopped
salt, pepper, and desired seasonings for chicken
8-10 flour tortillas (I had 10 inch ones and was able to fit 8 in the pan)
1 (10.75 oz) can cream of chicken soup
1 (4oz) can chopped green chiles
1 (8oz) container sour cream (I used fat free)
1 block of cream cheese (I used fat free)
2 tbsp sliced jarred jalapenos (optional depending on how spicy you want them)

Preheat oven to 350.

Heat cream of chicken soup, green chilis, and jalapenos in saucepan over medium heat (I pureed this mixture first because I don't like chunks of veggies).  Stir in sour cream and cream cheese.  Continue stirring until heated through, about 10 minutes.

Heat a large skillet over medium-high heat.  Season chicken with salt, pepper, and desired spices (I used pampered chef southwestern seasoning).  Place chicken breast and onion into skillet and cook and stir until chicken is no longer pink in the center, about 10 minutes.  Divide chicken and cheese evenly among tortillas then roll up each tortilla and place seam side down in a 9x13 inch baking pan.  Reserve some cheese for topping.

Pour cream cheese mixture over tortillas and sprinkle with remaining cheddar cheese.  Bake 25 minutes.

This sounds amazing!! I'm going to try it next week. I tried a recipe for salmon this week (I finally caved and made seafood for Brian, poor thing loves it and I hate it so I never make it) and it was pretty good. Also, if I lose my love of Mexican food after pregnancy I will just die.
