Sour Cream Enchiladas

During my pregnancy I lost my love of mexican food.  Sadly, it still has not returned.  I make the occasional taco and visit Taco Bell with my taco loving husband but I never long for mexican as I once did.  I think this recipe changed that for me.  Mmmm these were so good.  So good that when I just walked into the kitchen to heat some up for lunch I discovered that my men have taken them all to work.  Bummer.



2 boneless skinless chicken breasts cubed (next time I will cook then shred in the food processor)
1 bag shredded cheddar cheese
1 onion, chopped
salt, pepper, and desired seasonings for chicken
8-10 flour tortillas (I had 10 inch ones and was able to fit 8 in the pan)
1 (10.75 oz) can cream of chicken soup
1 (4oz) can chopped green chiles
1 (8oz) container sour cream (I used fat free)
1 block of cream cheese (I used fat free)
2 tbsp sliced jarred jalapenos (optional depending on how spicy you want them)

Preheat oven to 350.

Heat cream of chicken soup, green chilis, and jalapenos in saucepan over medium heat (I pureed this mixture first because I don't like chunks of veggies).  Stir in sour cream and cream cheese.  Continue stirring until heated through, about 10 minutes.

Heat a large skillet over medium-high heat.  Season chicken with salt, pepper, and desired spices (I used pampered chef southwestern seasoning).  Place chicken breast and onion into skillet and cook and stir until chicken is no longer pink in the center, about 10 minutes.  Divide chicken and cheese evenly among tortillas then roll up each tortilla and place seam side down in a 9x13 inch baking pan.  Reserve some cheese for topping.

Pour cream cheese mixture over tortillas and sprinkle with remaining cheddar cheese.  Bake 25 minutes.

Finished?

You may remember this post where I decided to update my bedroom.  The post was titled "preview" indicating that I would at some point actually show the finished room.  I did finish a few weeks ago but the more I looked at it the less I liked it.  I finally decided that the paint was the problem.  Not the main (accent) wall but the other three walls.  The color clashed with the fabric of our upholstered bed.  How did I not realize that before?

So yesterday I repainted and now I find the room very soothing.  I'm not saying I won't find something else I don't like about it next week but for today I am happy.

Anyway, here's the room before and after.






I have come to realize that I am never 100% satisfied with any of my projects.  I think for me that is just the way it is going to be.  I may have gotten this from my grandma, who is constantly redecorating and renovating.  If I ever do complete a room that I absolutely LOVE I'm not sure I will know what to do with myself.

I recently started managing the internet sales (Ebay) for rbtbags.  I just got the inventory (lunch totes, aprons, splat mats) this week to start listing the items and I had Mike model the apron for me.  Nice Mike.

JJ Cole.

This should not be the first thing I post about after coming back from my vacation but I am just too excited!

JJ Cole is one of my absolute FAVORITE baby product companies.  I have their logic diaper bag, system diaper bag, picnic blanket, pacifier pod, crib set, bib, and stroller straps.  LOVE their stuff.  Well about a month ago I became their "fan" on Facebook.  Today when I was checking the massive amount of e-mail I have from vacation I found a message from them.  I won a hamper and 2 storage bins.  Awesome!!  About $60 worth of product for ME for FREE.  And I got to pick the color.  Ahhh.  Life's little joys.
