Philly Cheese Sloppy Joes

I have made 5 Rachel Ray recipes in the last 2 weeks.  This is the 1st one I've kept for the book.  Not good luck with the Rachel recipes lately.  We love sloppy joes in this house (only the homemade kind) and these are truly fabulous and super easy.  To me the cheese sauce is optional.  You could definitely just buy some sliced provolone or mozzarella and that would be just as yummy.

Sloppy Joes:
1 tbsp EVOO
1 pound ground sirloin
1 onion, finely chopped
Salt and pepper
¼ cup steak sauce
1 cup beef stock

Heat EVOO in skillet over medium-high heat.  Add meat to hot pan and brown, breaking up meat with a spoon.  Add chopped onion and season onions and meat with salt and pepper.  Cook until onions are tender, 5 or 6 minutes.  Stir in steak sauce and beef stock.  Bring mixture to a bubble and cook for 2 minutes.  Reduce heat and simmer until thickened.

Cheese Sauce:
2 tbsp butter
2 tbsp flour
1 cup shredded white cheese

While meat is cooking melt butter in small pan over medium heat.  Stir in flour and cook about 1 minute.  Whisk in milk and let come to a bubble.  Add cheese, stirring in figure eight pattern then turn off heat.
